From the Italian tagliare, meaning "to cut", tagliatelle is a traditional type
of pasta from Emilia-Romagna and Marches regions of Italy.
Tagliatelle is traditionally served with a meat or Bolognese sauce, but also
works extremely well with a cheese or cream sauce.

Garofalo pasta is formed through a bronze die, this method allows a little
friction on the surface of the pasta, which becomes slightly rough and porous
