About the Dish:
Our reginette (Italian for ‘little queens’) are a striking, ribbon-shaped pasta
with wavy edges. Also known as mafaldine, this pasta shape was originally
created to honour the birth of Princess Mafalda of Savoy, the daughter of King
Victor Emmanuel III of Italy, in 1902. The princess had beautiful, curly hair,
and so these wavy strands of pasta were an appropriate tribute. With a textured
surface that was made to hold sauce, ribbons of reginette are the ideal
companion for our slow-cooked beef shin or lamb ragú; though we recommend
pairing with any of our delicious fresh pasta sauces available on Ocado.
