This chorizo is sourced from the Embutidos Ezequiel farm in Leon, Spain. 100%
pork is coarsely chopped and marinated in salt, garlic and paprika. The meat is
encased in natural casing and smoked over an oak wood fire for several days, and
then air dried for four months. The result is a rich, meaty chorizo, full of
flavour and lightly spicy.
