"I was utterly blown away by the quality of this wonderful Irish beef, a real
bargain, and this little joint makes for a perfect Sunday roast for small
households. I like to give it some time marinading in olive oil (just regular,
not extra virgin), some Maldon salt and a squeeze of lemon juice, before
roasting as directed on the packet. I like my beef really pretty rare, so did
what the instructions told me to achieve this (rather than roast using my usual
method) and it came out perfectly: beautifully tender, full of flavour, and easy
to carve into thin, rubied slices. Do not skimp on standing time when you take
it out of the oven: it absolutely needs to rest a little before being carved.
Now, that’s always the case with roast meats, I know, but I feel I need to
stress the importance with a small lean joint like this."
