Ramen is a Japanese noodle soup dish that typically consists of noodles, soup
and toppings. Authentic ramen noodles are usually made of four basic
ingredients: wheat flour, salt, water and Kansui. Also called lye water, Kansui
is a type of alkaline mineral water and is the distinguishing ingredient that
gives ramen noodles a yellowish hue and springy, chewy texture.
